- 4 (6 ounce) salmon fillets, skin removed
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1/2 cup thinly sliced bell peppers (any color)
- 1/4 cup thinly sliced red onion
- 1/4 cup chopped fresh cilantro or parsley
- 2 tablespoons lemon juice
- Salt and freshly ground black pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Tear off four 12×16 inch pieces of parchment paper. Fold each piece in half.
- In a small bowl, combine the olive oil, minced garlic, grated ginger, lemon juice, salt, and pepper. Mix well.
- Place one salmon fillet on one half of each parchment paper piece.
- Spoon the garlic-ginger mixture evenly over each salmon fillet.
- Arrange the sliced bell peppers and red onion around and on top of the salmon.
- Sprinkle with fresh cilantro or parsley.
- Fold the other half of the parchment paper over the salmon and vegetables. Starting from one end, make small, tight folds along the edges to seal the packet completely, creating a crescent shape.
- Place the sealed parchment packets on a baking sheet.
- Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. The cooking time may vary depending on the thickness of your salmon.
- Carefully open the packets (steam will escape) and serve immediately.
Notes
- You can customize the vegetables to your liking. Asparagus, zucchini, or cherry tomatoes work well.
- For an extra citrusy kick, add a thin lemon slice on top of the salmon before sealing the packet.
- Ensure the parchment packets are sealed tightly to prevent steam from escaping, which helps cook the fish evenly and keeps it moist.
